Called penny soup because the vegetable pieces look like coins, this soup is delicious with a few pieces of fresh bread and cheese, making a perfect lunch with the warm winter sun on your face!
Winter is coming, yes it's true! No matter though, because as it sets in we love to get in the kitchen and make a freezer full of soups ready for those shorter days and cold air! We had a great time this weekend on our Tent Ridge Hike and were happy to pull a container of this soup from the freezer to heat up after a long day in the mountains!

A salad chock full of protein, carbs, and greens is a great lunch for a long day hike like Cirque Peak in Banff National Park ( which we did last week! )
A delicious protein packed + hearty breakfast sandwich for this years hiking season! By grilling the sandwich it adds extra warmth to your meal for these chilly mountain camping mornings!
The first time I had over-night oats it was for breakfast before a long day of cross country skiing, where a great start to the morning is necessary. Enjoyed with a warm cup of coffee, this easy breakfast is how I start my day quite a few days of the week.
