Recipe: Wild Rice Cilantro Lime Salad

A salad chock full of protein, carbs, and greens is a great lunch for a long day hike like Cirque Peak in Banff National Park ( which we did last week! )

Here’s our own recipe for such a salad!

What you’ll need:

– brown rice 1.5 cups
– wild rice 1 cup

Cook your brown rice as recipe calls for but sub in 1/4 of the rice with wild, and let cool.

Salad Ingredients:
– sliced carrot 1
– chopped red onion 1/2 of a medium sized one
– cherry tomatoes 10 ( we used red and orange )
– chopped red pepper
– crumbled sheep & goat feta 1/4 cup
– 2 soft poached eggs

Chop and mix all of the salad ingredients together while rice cools.

– 1/4 cup olive oil
– 2 tbsp Braggs Apple Cider Vinegar
– 1 sliced garlic clove
– 1/4 cup rough chop cilantro
– salt + pepper to taste

Put all your dressing ingredients in a small blender and emulsify! If you don’t have a small blender, a food processor, or emulsifying want will work too!

Mix your cooled rice with salad ingredients, top with sliced egg, and serve dressing on the side. ENJOY!
